Vietnamese Spring Rolls

First, we bought a package of rice wrappers. Then TC’s dad brought us a package of rice wrappers. Then we forgot about the rice wrappers for a while. Finally, we decided to make them a few weeks ago for dinner. My protein for the meal was scrambled tofu in San-J Polynesian sauce and the men’s protein was yoghurt-ranch marinated grilled chicken. The salad dressing marinade was my idea, for the record.

The Sticky Rice Saga

The Sticky Rice Saga
 
In winter 2012, my aunt visited a friend of hers who is Thai. The friend made sticky rice for dessert and served it with bananas. My aunt and I tried recreating it with sushi rice and then with genuine Thai sticky rice. By the end of our experimentations, we had about ten pounds of Thai sticky rice in the house and no satisfactory results from the recipes we had.

On Monday I officially began the Institute for Integrative Nutrition ® program to become a health coach.  What is a health coach?  A health coach works with people who want to make positive changes in their physical, spiritual, and mental health by encouraging said people along their wellness journey.  A health coach makes recommendations for sustainable changes and holds hir clients accountable for making gentle changes in their lives in support of the clients’ goals.
