Buckwheat Almond Banana Muffins

I have done something unspeakable to almond butter: microwaved it in plastic.
 
I bought chunky almond butter in bulk and stored it an old soynut butter container.  As I neared the bottom of the jar, since I hadn’t consistently stirred it before consumption, the butter at the bottom was dry.  In order to make the muffins below, I microwaved the almond butter in order to make it stir-able, and I went thirty seconds too far.  Oh well.  The muffins suffered no ill effects, and my brother ate probably half the batch before and after the bike races in which he participated last weekend.

Muffin Kick | Double Chocolate Muffins

“Muffin courier.”  That’s what I want my next job to be.  The muffins will be so deliciously valuable that I’ll have to handcuff my Harry Potter lunchbox to my wrist.  As far as I know, this “breakfast dessert” does not kick back.

Breakfast Muffin Screed

Why is there an egg in the original recipe for “Banana-Flax Breakfast Muffins?”  The recipe has a quarter cup of ground flaxseed, which is equivalent to 4 eggs in the vegan baking world.  The egg  seems to add only unnecessary cholesterol since the chemical leaveners and buttermilk and flaxseed do an excellent job of leavening and binding, effectively replacing the role of an egg.  Furthermore,  why is there 1 cup of sugar in breakfast muffins?  Bananas are naturally sweet; they really don’t need the help.

Post-Finals | Sweet Potato Muffins

Greetings, Earthlings—

If there’s anything I’ve learned at school, it’s that finals are only as good as your playlist(s).  My first of five playlists for finals was “Bloody Mary” by Lady Gaga, “No Reflection” and “You’re so Vain” (feat. Johnny Depp) by Marilyn Manson, “Mutter” and “Sonne” by Rammstein, and “Without a Face” by Rage Against the Machine.  My final finals playlist just kept growing as I worked later and later.  About 20:00 on Friday, I realised it would take me until the next day to finish my paper (which, incidentally, wasn’t due until a week later), so I figured I’d have fun with staying up past midnight in order to do schoolwork for the first and last time in my undergraduate education.  At strategic intervals, I carb-loaded, eating cereal and muffins-that-taste-like-doughnuts.

Coconut Heart Cakes

Have a piece of my heart.  Or tear my heart to pieces, can do that, too.

 


Coconut Heart Cakes

Makes 6 muffins or a short 8*8” square
 
½ cup brown rice flour
½ cup Bob’s Red Mill All Purpose GF Baking Flour
½ teaspoon xanthan gum
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
½ teaspoon nutmeg
½ teaspoon ginger
 
2 tablespoons coconut oil
½ cup applesauce
½ cup coconut milk
¼-½ cup agave nectar (depending on how sweet you want it)
1 teaspoon vanilla
 
1 cup flaked unsweetened coconut
 
Preheat oven to 375 degrees Fahrenheit.  Grease or paper 6 muffin wells or an 8*8” square pan.  In a large bowl, whisk together the dry ingredients.  Stir in the coconut.  In a large measuring cup, melt the coconut oil.  Whisk in the applesauce, coconut milk, agave, and vanilla.  Add wet to dry and mix well.  Transfer to the pan and bake for 25-27 minutes or until it passes the toothpick test, springs back when touched in the centre, and pulls away from the edges.  This cake browns quite a bit because of the agave.  Cool completely in the pan.
