Mystery Beans!

Un-Refried Beans

  1. 1 small onion, half-mooned
  2. 2 cloves garlic, smashed
  3. 1 teaspoon whole cumin
  4. 1 tablespoon chili powder
  5. 1 16-ounce can pinto beans, rinsed and drained
  6. 1 16-ounce can black beans, rinsed and drained
  7. 3 tiny beets, peeled and sliced into rounds
  8. salt to taste (optional)
  9. 1 cup vegetable broth
  1. In a large skillet over medium heat, heat onion and beets to take the edge off (dry sautee  with a little salt).
  2. Add garlic and stir around.
  3. Clear a space in the middle of the veggies and toast spices until fragrant.
  4. Add broth and beans.
  5. Cook for 20 minutes until thick-ish.
  6. Take bean mixture off the heat.
  7. Obliterate everything in blender until there are no specks of bean skins left.
  8. Pour into container and let cool and thicken some more.
  1. I use unsalted beans and didn't add a lot of salt; salt at will, commander.

Sprouting the carrots in the little soil pucks stunted their root growth big time. The greens looked normal and full, but the roots tangled together and didn’t grow very much at all. Next year…
