Zucchini Banana Coconut Paleo Bread

The second paleo recipe of late…what is this madness?! One of my neighbors gave me an entire bag of Nutiva coconut flour, and this was the first thing I made with it. The Wednesday farmers market is usually a little thin on goods, but one vendor offers an “all you can fit” bag for $10. I used zucchini in this recipe from the farmers market.

This bread is very moist, like most zucchini breads. The key to having it not fall apart is to sweat extra moisture out of it. To make proper shreds, I spiralized the zucchini then snipped it up with kitchen scissors. Then I sweated the extra moisture out if it.

Ingredients
  1. 2 cups zucchini or summer squash, shredded
  2. 1/2 teaspoon sea salt
  3. 1 teaspoon organic sugar (optional and not paleo)
  4. 3 medium-sized ripe bananas
  5. 1/4 cup coconut oil, melted
  6. 1 teaspoon vanilla extract
  7. 1 cup coconut flour
  8. 1/2 teaspoon xanthan gum
  9. 1 teaspoon baking soda
  10. 1 teaspoon baking powder
  11. 1/2 teaspoon ground cardamom
Instructions
  1. In a sieve over a large bowl, mix shredded zucchini, salt, and optional sugar. Stir and let sit for 30 minutes.
  2. After 30 minutes, press out the excess moisture with the back of a spoon and blot any more moisture with a paper towel.
  3. Preheat the oven to 350 degrees Fahrenheit.
  4. Grease a 9*4-inch loaf pan and set aside.
  5. In a blender, blitz together the banana, coconut oil, and vanilla.
  6. In a medium bowl, sift then whisk together the coconut flour, xanthan gum, baking soda, baking powder, and ground cardamom.
  7. Add the wet to the dry and mix well.
  8. Fold in the zucchini.
  9. Transfer batter to prepared pan and smooth out.
  10. Bake for 45 minutes or until bread tests dry and cracks a little on top.
  11. Let cool in pan for 30 minutes before removing to a rack to cool completely.
  12. Store in the refrigerator since it is moist.
Notes
  1. Xanthan gum is made from a bacteria and is probably not paleo, but hey, paleo folks eat dark chocolate, and that sure as heck isn't paleo. Use the xanthan gum and your bread won't fall apart.
